CELERY SOUP

Chop up some sticks of celery. 
Fry in butter a sliced onion and bacon if you wish. 
Add chopped celery and fry in the butter lightly. 
Add water to cover and some powdered chicken stock. 
Simmer until celery is cooked. 
Puree till at a consistency that you like and re-heat if necessary adding some cream.

CREAM OF PUMPKIN SOUP

One Pumpkin Skinned and chopped.
Two cups water.
150mls cream
Salt and pepper
Garlic powder
Sour cream
Chives

Put pumpkin and water in a large pot and bring to the boil. Simmer until pumpkin is tender. Cool, then put into a blender with some of the liquid each time and puree. You will need to divide it up as it won't all fit into the blender at once. Return pureed pumkin to the pot and bring to boil again. Season with salt, pepper and add garlic powder and nutmeg to taste. Remove from heat and stir in the cream until well blended. Pour into a bowl and top with a swirl of sour cream and a sprinkle of chopped chives. It can be frozen and reheated gently.
