ATKINS BAKE MIX -How To Make Your Own

1)

1 cup soy flour 
2 cups soy protein isolate
2 TBSP baking soda
1 tsp salt 
2 TBSP Splenda

Sift all together and keep in an air tight container.. 
Use in place of Bake mix in Recipes. 

2)

1/2 cup ground almonds
1/4 cup soy protein Isolate
1 tsp baking powder

Mix and keep in an airtight jar.
(approx 1 Carb)

3)

1 cup Whey Protein Isolate
1 cup soy flour
3 tbsp baking powder
1 tsp salt

Sift everything together three times. Use as you would the Atkins or GNC
bake mix.

4)

1 cup soy flour
2 cups soy protein Isolate
2 tbsp Splenda
1 tsp salt

mix well together-store in a cool dry place.

5)

Atkins Bake Mix - No Soy

1 cup almond flour
1 cup vital wheat gluten
1 cup unflavoured whey protein powder
4 packets Splenda
2 tablespoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt

Mix all together and store in a zip lock bag in the fridge. When a recipe
calls for bake mix, just measure according to the recipe.

Yield: 3 cups

1457 Calories; 66g Fat (39.3% calories from fat); 169g Protein; 60g
Carbohydrate; 16g Dietary Fibre; 80mg Cholesterol; 4763mg Sodium.

CHEESE SAUCE

How would I make a low-carb creamy cheese sauce to pour over veggies or make into a dip?

I just melt 2oz of cream cheese and 1/3c shredded cheese. 
It tastes SO good over broccoli or cauliflower. Using other cheeses works great too!

CHICKEN GRAVY

1 T (tablespoon) butter
1 T of finely minced shallots or onion
250 mls of Chicken stock
5-7 white button mushrooms, chopped
3/4 C whipped cream
seasoning
1/4 C dry white wine (optimal)

Melt the butter in a pan and sauté the onions. 
Add the stock, wine, and mushrooms and boil rapidly to reduce sauce to 3/4.
Add the cream and cook for a further 2-3 minutes to allow to thicken slightly. 
The sauce should have a thin coating consistency. Season to taste. "Truly delicious"

WHOLE BERRY CRANBERRY SAUCE

12 ounce bag cranberries
1 cup water
1 cup Splenda

Pick over the cranberries, discarding any nasty ones. 
Put all ingredients in a saucepan over medium heat. 
Bring to a boil, and boil until the cranberries pop. That's it. 
Cool it and it's ready to serve.

This makes over a pint, and there's about 54 grams of usable carb in the batch.

If you like, you can add a teaspoon of unflavored gelatin to this to thicken it up a bit, but it's not seriously necessary.

CRANBERRY CHUTNEY

Think of this as cranberry sauce with a kick!
12 ounce bag cranberries
1 cup water
3/4 cup Splenda
2 cloves garlic, crushed
1 teaspoon ground cloves
fresh ginger, a piece about the size of two whole walnuts, grated or minced very fine
1/8 teaspoon salt
Simply combine all ingredients in a saucepan over medium heat, bring to a boil, 
and boil until cranberries pop; about 7-8 minutes. It improves if you then let it sit a while. 
You could add a little cinnamon to this, too, if you like; up to you.
There's about 55 grams of carbohydrate in the whole batch -- not dirt low, 
but a tablespoon or two shouldn't be more than 4-5 grams. Very flavorful. 
Wonderful with curried leftover turkey!

CHOCOLATE CHIPS

Melt 1-1/2 tsp butter, add 3 tsp Splenda and 4-1/2 tsp cocoa. 
Mix well. Put into small greased container, place in fridge to harden overnight. 
Cut into little chips.

SUGAR-FREE CHOCOLATE

1/8 cup cocoa (can add 2 extra tsp)
1/8 cup butter
1/8 cup heavy cream
1/4 tsp vanilla extract
3 tsp Peanut Butter (no sugar) crunchy or smooth
1/4 cup Splenda

Melt butter in microwave until hot! Add cocoa first and whisk very well. 
Add Splenda, essence, cream and peanut butter. 
Mix well. Drop by spoonfuls onto waxed paper and refrigerate.

You can use any NO-BAKE cheesecake recipe for this. 
Spoon chocolate into cupcake papers, just enough to cover bottom. 
Spoon cheesecake in until full.

A GREAT SUMMER DRINK

Yoghurt - Naturalea from Mainland Foods available in cardboard 600 gram cartons.

1/2 cup yoghurt
1/2 cup water
1 teaspoon liquid sweetener 
pinch of salt

Beat with an egg beater till frothy, then pour over lots of ice in a pretty glass. 
Very refreshing and a nice change from water.
The carb count was about 4.6 per 100 grams
